Lightness and impalpability...

Peking duck is a triumph of lightness. Dumplings are wrapped in a thin, non oily film and their taste is absolutely special.

By beef we mean only beef tenderloin, as well as by chicken we mean only drumsticks. Our meat and fish are absolutely fresh. With respect to crab meat, one of our chefs works every afternoon to boil shellfish and strip the flesh off, one by one.

We think that Yin and Yang can express themselves eminently this way, like two opposite and complementary principles that, by coming together, give life to something perfect. Our courses may not be perfect, but perfection is what we work towards while preparing each of them.
